Apples:

  • 2 medium apples (Granny Smith or Gala), peeled and diced into 1/2-inch pieces

  • 1 teaspoon ground cinnamon

Bread:

  • 1 1/2 cups all-purpose flour
  • 1 1/2 teaspoons baking powder
  • 1/2 teaspoon salt
  • 1/2 cup unsalted butter, room temperature
  • 2/3 cup sugar
  • 2 eggs, room temperature
  • 1 1/2 teaspoons vanilla extract
  • 1/2 cup milk

Cheesecake Filling:

  • 8 oz. brick-style cream cheese, room temperature
  • 1/3 cup granulated sugar
  • 3 Tablespoons all-purpose flour
  • 1 teaspoon vanilla extract
  • 1 egg

Glaze:

  • 3/4 cup powdered sugar
  • 2 Tablespoons milk or creme
  • 1/2 teaspoon vanilla extract

Instructions

  1. Prepare Pan and Preheat Oven: Grease a 9 x 5-inch loaf pan with baking spray, then line it with parchment paper leaving a large overhang on the sides to easily lift the bread later. Adjust the oven rack to just below the center (lower third position) and preheat the oven to 350°F.
  2. Make Crisp Topping: In a bowl, combine all-purpose flour, quick-cooking oats, light brown sugar, cinnamon, and nutmeg. Add the melted butter and whisk with a fork until the mixture is evenly moistened. Place the topping in the refrigerator until ready to use.
  3. Prepare Cinnamon Sugar and Apples: In a small bowl, mix together 3/4 teaspoon ground cinnamon and 3 tablespoons light brown sugar; set aside. Peel and dice the apples into 1/2-inch chunks, then toss with 2 tablespoons granulated sugar and 1 teaspoon ground cinnamon; set aside as well.
  4. Make Bread Batter: Beat the room temperature butter with sugar and vanilla extract until fluffy. Add the eggs and mix until combined. Gradually add the flour, baking powder, and salt mixture, blending well. Slowly pour in the milk and mix just until combined, scraping down the sides of the bowl to remove lumps.
  5. Prepare Cheesecake Filling: In a separate bowl, beat softened cream cheese with granulated sugar, all-purpose flour, and vanilla extract until smooth. Add the egg and mix just until combined. Set aside.
  6. Assemble the Bread: Spread half of the bread batter evenly in the prepared loaf pan. Scatter half of the apple mixture over the batter, then sprinkle with half of the cinnamon sugar mixture. Spoon the cheesecake filling atop the apples, gently spreading it with the back of a spoon without reaching the edges of the pan. Spoon the remaining bread batter over the cheesecake layer and smooth the top gently. Lastly, scatter the remaining apples and sprinkle the crisp topping evenly over the surface.
  7. Bake the Bread: Bake in the preheated oven for 55-70 minutes, or until a toothpick inserted in the center comes out clean. If the top browns too quickly, tent with aluminum foil after 30-40 minutes to prevent over-browning.
  8. Cool the Bread: Remove the bread from the oven and let it cool in the pan on a cooling rack for 20-30 minutes. Then, lift the bread out using the parchment paper overhang and place it on the rack to cool completely.
  9. Make and Drizzle Glaze: Stir together powdered sugar, milk or creme, and vanilla extract until smooth. Drizzle the glaze over the cooled bread before slicing and serving.
