Ingredients

Scale

For the Salad

  • 2 stalks Sliced Celery
  • 1 pound Squid, Cleaned and Sliced into Rings
  • 1 medium Sliced Red Onion
  • 2 stalks Sliced Green Onions
  • 1 can Sliced Bamboo Shoots
  • 1 cup Kikurage Mushrooms

For the Dressing

  • 3 tablespoons Rice Wine Vinegar
  • 2 tablespoons Kadoya Sesame Oil
  • 1 teaspoon Grated Ginger
  • 4 tablespoons Soy Sauce
  • 2 tablespoons Vegetable Oil
  • 1 teaspoon Granulated Sugar

For the Finish

  • 2 tablespoons Sesame Seeds

Instructions

  1. Prepare the Dressing and Vegetables: In a large bowl, combine the sliced celery, rice wine vinegar, sesame oil, grated ginger, soy sauce, and vegetable oil. Stir well until all ingredients are thoroughly blended to create the flavorful dressing base.
  2. Marinate the Squid: Gently add the squid slices to the bowl with the dressing. Stir carefully to coat the squid evenly without breaking the rings. Cover the bowl and allow the squid to marinate for at least 30 minutes to absorb the flavors.
  3. Add Remaining Ingredients: Fold in the sliced red onions, green onions, sesame seeds, granulated sugar, sliced bamboo shoots, and kikurage mushrooms. Mix gently until all components are evenly distributed throughout the salad.
  4. Chill to Meld Flavors: Place the entire salad in the refrigerator and chill for at least one hour. This resting period helps the flavors to meld beautifully and the ingredients to develop balance and depth.
  5. Serve and Garnish: Just before serving, garnish the salad with additional sliced green onions and sesame seeds for added freshness and crunch. Serve chilled for the best taste experience.

Notes

  • You can substitute squid with shrimp or scallops if preferred.
  • Replace celery with jicama for a different crunchy texture.
  • Green onions can be omitted or substituted with milder alternatives such as chives.
  • For gluten-free option, use gluten-free soy sauce.
  • Feel free to adjust the sugar quantity or replace it with honey for a natural sweetness.
  • This salad tastes best served chilled after proper marination time.
