  • 250 grams Spaghetti
  • 1 teaspoon Chilli Flakes
  • Salt, to taste
  • 1 1/2 teaspoons chopped Parsley
  • 23 tablespoons Parmesan, grated

Fresh Ingredients

  • 200 grams Button Mushrooms, cleaned and cut in half
  • 100 grams Oyster Mushrooms
  • 78 cloves Garlic, finely chopped

  • 1/3 cup Olive oil, divided

Instructions

  1. Boil Spaghetti: Bring a large pot of salted water to a boil and cook the spaghetti as per the package instructions until al dente. Before draining, reserve one cup of the pasta cooking water and then drain the spaghetti well.
  2. Sauté Mushrooms: While the pasta is cooking, heat one tablespoon of olive oil in a pan over medium-high heat. Add the button and oyster mushrooms and sauté for a few minutes until they are golden brown on all sides. Avoid overcrowding the pan to prevent steaming the mushrooms.
  3. Prepare Garlic Sauce: In the same pan, add the remaining olive oil and finely chopped garlic. Cook on low heat until the garlic turns light golden brown, being careful not to burn it. Add the chili flakes, reserved pasta water, and half a teaspoon of salt. Let the sauce simmer and reduce for about 2-3 minutes until it emulsifies into a flavorful sauce.
  4. Toss Pasta and Sauce: Add the cooked spaghetti and sautéed mushrooms to the pan. Sprinkle chopped parsley and toss everything thoroughly to coat the pasta well with the garlic chili sauce.
  5. Serve: Transfer the pasta to serving plates, top with grated Parmesan cheese, and serve immediately while hot and flavorful.
